Lemon-Oregano Grilled Calamari Tubes And Tentacles
Ingredients:
- 1 tablespoon dried oregano
- 2 tablespoons grated lemon zest
- 1 lemon, juiced
- 1 red and 1 green pepper, chopped finely
- 1 tablespoon parsley, chopped finely
- 6 tablespoons olive oil
- 1 teaspoon garlic, finely minced
- 2 teaspoons sea salt
- 2 pounds Calamari tubes and tentacles
Directions:
Cut the calamari tubes into half inch strips and put them in a bowl along with the tentacles. Season with the salt, olive oil, dried oregano, lemon zest, half of the lemon juice, the red and green peppers. Then mix lightly to combine the ingredients and refrigerate for 30 minutes.
After 30 minutes place the Calamari tubes and tentacles on a medium heated grill, for 2 minutes per side. This can be done in batches, until finished. When all the batches are done place everything in a large serving plate, sprinkle the parsley and the remaining lemon juice over the freshly grilled calamari tubes and tentacles, then enjoy. This dish can also be served with some hot pepper barbeque dipping sauce.
