Family to the King Mackerel, fresh Fijian Ono are caught with the use of trollers in the Hawaiian waters. With firm, white flesh, fresh Ono Wahoo can be baked, broiled, fried, grilled or sauteed to perfection.

Fresh Fijian Ono Wahoo Poached in Coconut milk

To prepare you need:

  • 1 stalk lemongrass, finely chopped
  • 1 red chilli pepper sliced lengthways
  • 1/2 onion thinly sliced
  • 1 can crushed tomatoes
  • 2 - 3 tablespoons lemon juice
  • 2 tablespoons fish sauce
  • 1 teaspoon sugar
  • 1/4 cup chopped basil leaves
  • 1 can coconut milk
  • 4 fresh Fijian Ono Wahoo fillets

Heat a large pan to about 60 degrees F. Add lemongrass, and chilli pepper to 1/4 cup coconut milk, then fry for 2 - 3 minutes until liquid evaporates and lemongrass becomes tender. Next stir in the remaining coconut milk, tomatoes, basil, onion, sugar, fish sauce and lemon juice, and simmer for 5 minutes. Place fresh Fijian Ono Wahoo fillets in pan and cook for 2 1/2 minutes on each side. Season with salt and pepper. This dish can be served with some rice and sauteed spinach. Enjoy.
