How to properly defrost frozen seafood: We recommend that all frozen seafood be defrosted by placing product in the refrigerator for 12 to 24 hours depending upon the density. Never force thaw a product by running it under water (hot or cold as it can cook the product). Not only does this reduce the flavor, but it is also a health hazard.

Seared Ahi Tuna

Serves 4-6

Items You Will Need:

  • 2 Each Tuna Blocks (8-12oz pieces)
  • 2 cups Lemon-Ginger Marinade (See Recipe Below)
  • 1 oz Sesame Oil

Recipe Lemon-Ginger Marinade:

  • 6 oz Sesame Oil
  • 6 oz Soy Sauce
  • 2 oz Rice Vinegar
  • 2 oz White Wine (Dry)
  • 4 oz Lemon Juice
  • 2 TBSP Lemon Zest
  • ½ TBSP Black Pepper
  • ½ TBSP Crushed Red Chiles
  • 1 Cup Green Onions (Sliced)
  • 1/2 Cup Cilantro (Chopped)
  • ¼ Cup Ginger (Fresh Minced Ginger)
  • 2 TBSP Garlic (Minced)

Accompaniments :

  • Green Onion Salad
  • Toasted Sesame Seeds

Direction To Make :

  1. Prepare the Tuna into portion blocks as specified.
  2. Marinate the Tuna blocks in 2 Cups of the Lemon-Ginger Marinade for 1 Hour. (Reserve the remainder for later.)
  3. Turn over at least once during the marinating process to insure complete coverage.
  4. Remove from the marinade, reserving the liquid.
  5. Heat a skillet and add 1oz Sesame Oil to the pan.
  6. Gently add the Tuna to the pan, and turn the pieces after 15-20 seconds to obtain a hot sear on all sides.
  7. Remove and immediately place back into the marinating liquid to stop the cooking.
  8. If searing multiple pieces, repeat this process until all pieces have been seared and submerged back into the marinade.
  9. Store the Tuna in the Marinade until time of service. (Only hold in marinade up to 4 hours)

Steps To Plating :

  1. Remove from the liquid and thinly slice, layering the Tuna onto the platter.
  2. Drizzle some of the unused marinating liquid (sauce) on and around the Tuna.
  3. Garnish the platter with Shredded Green Onions and Toasted Sesame Seeds.

Grilled Mediterranean Ahi Tuna

Preparation time: 15 minutes

Cooking time: 10 minutes

Servings: 4

Ingredients :

  • Four 5oz. uncooked fresh or frozen (thawed) Ahi tuna steaks
  • 1 inch thick
  • 1 tbsp. extra virgin olive oil
  • 1/2 tsp. kosher salt
  • ½ tsp. lemon juice from 1 wedge of lemon
  • 1/4 tsp cracked black pepper freshly ground
  • 1/2 tsp finely chopped oregano or 1/4 tsp dried
  • 1/4 tsp red pepper flakes or dash crushed dried
  • 1 tsp finely chopped basil or 1/4 tsp dried
  • 1 clove of garlic minced fine

Directions :

  • Preheat outside grill on medium high setting when you start your preparation or start the charcoal grill about 30 minutes before planning to grill tuna.
  • Pat tuna steaks with paper towels to remove excess moisture, then place in a shallow dish.
  • Mix all spices with oil and lemon juice in a small bowl with a fork or whisk. Allow to rest for at least 5 minutes to blend together.
  • Brush mixture on both sides of ahi tuna steaks and allow tuna to rest for another 5 minutes.
  • Grill the tuna on hot grill for 2 to 5 minutes on each side to attain desired doneness. For well-done, there should still be some pinkness to the center. Most prefer barely warm red centers.
